For the Love of Spaghetti Squash

I find cooking with spaghetti squash is actually quite easy. The most difficult part is slicing it in half and waiting for it to cook.

  1. Slice squash lengthwise from stem to tail.

  2. Scoop out seeds (...but save them to roast for a snack later).

  3. Rub the inside with coconut oil and spices.

  4. Bake at 450 for 35-45 minutes. Pierce with a fork to ensure tenderness. The inside should easily pull away from the rind.

  5. Fill the cooked squash with whatever cooked vegetables and sauces you desire. Even stuff it with leftovers! Consider topping a fresh spaghetti squash with vegan jambalaya, roasted vegetables w/ tomato sauce or Thai vegetable curry. Try it with some cheese, coconut milk, a little soy sauce, or maybe just salt and pepper!
